As solid a citrus as any acid-lover could ever wish for, Bergamask gifts us with a whole new experience of this singular fruit. Initially sweet and thick with a viscous, fragrant juice, this tree-borne treat ripens and, mid-golden-pour, morphs into a saltier citrus whose slick surface begins to bubble. A satisfyingly oily yet fugitive formation soon supersedes the original fruitilicious scent, and the bittersweet, rich resolve on skin is simultaneously fresh and finished, as if two portraits of bergamot (pre and postmortum) reside side by side.
